big mistake...

since i've been cutting out crusty sweetness for the laste couple of weeks, i've had a leftover biscuit issue. well, the munchkin still likes her morning biscuits. and since my favorite trader joe's biscuits only come in the 8 pack...i've been storing the leftovers in the cookie jar. at any rate, upon the suggestion of my dear mommy, i decided to make some bread pudding for dessert to make use of the stash. bad idea.  and i even decided to let myself indulge a little since i've been doing so well with my little addiction. one slice as a little reward right? i just  ran in to get one more little sliver.. see.. this is how it starts:-(

at any rate, it turned out super yummy for my first try... i swear i could smell it from the street.  i over did it on the vanilla extract and added a little brown sugar on top just for good measure.

bunnie's easy breezy bread pudding


Ingredients
6 5 day old biscuits
2 tablespoons butter, melted
1/2 cup raisins (optional)
4 eggs, beaten
2 cups milk
3/4 cup white sugar
1 teaspoon ground cinnamon
3 teaspoon vanilla extract
1 tablespoon brown sugar


1.Preheat oven to 350 degrees F.

2.Break biscusits into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. Sprinkle with raisins.

3.In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture. Sprinkle brown sugar on top.

4.Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
 
 YUM!

any other ideas on what to with leftover bread? throw it in the trash is probably the best idea for all of our sakes:-/
